2 oz Gin
¾ oz Lemon Juice
¼ oz Simple Syrup
1 Barspoon of Raspberry Preserves
1 Egg White
What To Do
Add all of the ingredients in a shaker WITHOUT ICE (this is called a ‘dry shake’). Dry shake very well for at least 30 seconds. Add ice then shake till the drink cools. Double strain into a chilled coupe glass. Garnish with some raspberries.
A Few Words
The Clover Club cocktail has roots in the pre-prohibition era social club of the same name that was started in the Bellevue-Stratford Hotel in Philadelphia in the late 1880s. Yes…it’s pink. But yes… it’s definitely delicious. I’ve seen some recipes that use grenadine instead of raspberry syrup or preserves. Don’t do that! It’s not the same drink. If you don’t have preserves or raspberry syrup, just muddle some fresh raspberries with some simple syrup and shake the drink as stated above. That’s works too. Cheers!
