2 oz Pimm’s #1
¾ oz Lemon Juice
½ oz Simple Syrup
3 Cucumber slices (and some extra for garnish)
Ginger Beer/Ale to top off.
What To Do
Place a few slices of cucumber in the bottom of a mixing tin and muddle them with the simple syrup. Add the Pimm’s and Lemon Juice and shake well with ice. Strain into a chilled Collins glass with ice. Top with the ginger soda. Garnish with some fresh cucumber, mint, or any other fruit you so desire.

Oh the Pimm’s Cup, how I love thee. Just such a good drink. And it’s pretty low in alcohol so you can have a bunch! Hooray! In the 1840s James Pimm, the landlord of an oyster bar in London invented and marketed it as a health tonic. Yes, it’s technically a summer drink, but who’s going to stop me from enjoying it in the winter. Still tastes just as good! I like to make mine with ginger beer because I enjoy the slight bite that it gives to the drink but ginger ale also works. Cheers!
