2½ oz Plantation Pineapple Rum
¾ oz Lime Juice
¼ oz Pineapple Shrub (recipe below)
¼ oz Orgeat Syrup
1 Barspoon of Absinthe
What To Do
For Shrub: Fill a mason jar with pineapple chunks. Cover with apple cider vinegar. Seal. Let it sit for at least 7 days. When done, strain into a saucepan and add 1/2 cup or so of sugar. Get it to temperature so the sugar melts. Cool. Store. Done.
Combine all ingredients except absinthe in shaker. Shake well with ice. Strain. Serve in a Coupe glass. Garnish with a lime twist. Spritz on top with atomizer filled with absinthe or rinse coupe initially with absinthe.
A Few Words
An incredible variation on a daiquiri. I managed to get a hold of the hard-to-get bottle of the Plantation Pineapple rum. It is absolutely amazing. Not sweet with a great hit of pineapple on the nose and on the back end. I wanted to come up with something that highlights the pineapple but doesn’t overtake the spirit. This is simple for a reason. I want the rum to shine…and it does. Cheers!
