Port No Authority


2 oz Campfire Whiskey
½ oz Benedictine
¼ Creme de Cacao
¾ oz Lemon Juice
3 Dashes of Mole Bitters
1 Barspoon Mezcal
1 Splash of Ruby Port
Thyme sprigs for garnish. Torched till smoking. (optional)

What To Do

Combine all ingredients except port and thyme in a shaker. Shake well with ice. Strain into a chilled rocks glass with crushed ice. Float some ruby port on top. Garnish with some torched thyme sprigs.

A Few Words

Port wine was the inspiration for this drink. I was thinking about what port wine is. It has hints of smoke, chocolate, herbs, caramel. So I decided I’d make a drink incorporating all those notes. Try to find a smokey whiskey for this. I even added a touch of mezcal to bump up the smoke factor because I love that flavor in cocktails. The Benedictine gives it the herbal complexity. The Creme de Cacoa and bitters round everything out while the burnt Thyme sprigs and port wine float give you those great aromas on the nose as your drink. Cheers!
