2 oz Gin
¾ oz Lemon Juice
¾ oz Honey Syrup (recipe below)
What To Do
Honey Syrup: I like to use a 2:1 ratio for my honey syrup. So simmer 1 cup of honey and ½ cup of water over medium heat till honey dissolves. Let cool. Bottle. Refrigerate.
Combine all ingredients. Shake well with ice and strain into a chilled coupe or Nick and Nora glass. Garnish with a lemon twist, or if you’re lucky like me, a piece of honeycomb. Serve.
A Few Words
The Bee’s Knees is one of the few cocktails that was probably invented during Prohibition. Some claim it was developed by bartenders at the time to cover up the terrrrrrible bathtub Gin they had during that time. Whatever the reason, what came out was an awesome and approachable sour. You can taste every ingredient. A great Spring cocktail. Cheers!
