Pale Pineapple Fizz


1½ oz Old Tom Gin
¾ oz Bonal Aperitif
2-3 oz IPA
¾ oz Pineapple Juice
½ Lemon Juice
3 Dashes Aromatic Bitters
1 Barspoon of Simple Syrup
½ Egg White

What To Do

Add every ingredient except for the IPA in a shaker WITHOUT ICE (this is called a ‘dry shake’). Dry shake very well for at least 15-30 seconds. Add ice then shake till the drink cools. Double strain into a chilled highball glass. Top with the IPA. Spritz the top of the cocktail with some Aromatic Biters to coat the foam (optional). Garnish with some pineapple leaves.

A Few Words

Been overdue for some beer cocktails so here’s the first of probably many. A good IPA goes great with anything citrus or fruity so I thought I’d make a play on a standard gin fizz. A really nice day drink for the Spring time. Refreshing. Fruity. Slightly bitter. Goes down wayyyyyy too easy. Cheers!
