Pine and Tonic


Ingredients

1 oz Gin
1 oz Douglas Fir Eau de Vie
¾ oz Tonic Syrup
½ oz Lime Juice
2 Barspoons Green Chartreuse
1 Barspoon Simple Syrup
2-3 oz of Club soda
Sprig of Rosemary

What To Do

Combine all ingredients except club soda and rosemary. Shake well with ice and strain into a chilled highball glass. Top with club soda and garnish with a sprig of Rosemary. Serve.

A Few Words

So you know that old wives’ tale about gin tasting like “you’re drinking a Christmas tree” even though good gin doesn’t taste like that all? Well, I wanted to make a drink that actually does taste like that! I was able to get a bottle of Clear Creek’s Douglas Fir brandy for crazy cheap and wanted to make something that highlights that flavor. It’s made from an infusion of the springtime buds of the Douglas fir tree. It very balanced, so don’t expect an explosion of pine. It’s subtle and awesome. Here’s what I came up with. Cheers!
